Pear & Goat Cheese Salad

After creating a delicious main dish, making a salad can often feel like the last thing you want to do. More chopping and slicing? No thank you. But this salad idea is very simple with just a few ingredients. Plus, the combination of pear, goat cheese and walnuts will make your family or any guest think, “Man! They really know food”.


PEAR & GOAT CHEESE SALAD

Prep Time: 5 min.

Ingredients

  • 1 package spring mix
  • 1 pear, sliced or diced
  • 1/3 cup toasted walnuts
  • 4 oz goat cheese

Vinaigrette Dressing

  • 1/3 cup Olive oil
  • 3 tbsp white wine vinegar
  • 1 tsp mustard
  • 1/4 tsp sugar
  • pinch salt & pepper

Instructions

  1. In a pan over medium heat, toast the walnuts by adding them to a heated non-stick pan and allow them to warm up for about 3-5 minutes. You can also try this in a preheated 350°F oven for a similar amount of time. Keep an eye on them so they don’t burn.
  2. Add dressing ingredients to a small container with a lid and shake to combine.
  3. In a bowl, add spring mix followed by your sliced pear and toasted walnuts. Crumble the goat cheese on top and pour dressing to taste over your salad.
  4. Put the lid back on any remaining dressing and store in the fridge for future use.
